(Florida) Key Characters

Without good people that all work well together, a restaurant just can’t be great. We’re very fortunate here at the Conch Republic Grill to have an amazing group of talented people working in the kitchen, behind the bar, serving our customers and coordinating this whole “concha-line” dance.

Jen and Keith

Jen and Keith came to Florida several years ago as part of Keith's ascent of the corporate ladder at a very large restaurant chain. Jen also was “in the biz” and had earned her apron strings managing various restaurants. They quickly decided that Florida was the place to settle down and so bought a house and started a family - first Abbigail (Abby) and then Gabrielle (Gabby).

Eventually they realized that the stresses and strains of being a high executive, combined with all the time away from house and family, simply wasn't worth it, and so Jen and Keith decided to follow their dream and run a restaurant of their own. The Conch Republic Grill and Raw Bar was born!

 

 

Employee of the Month: Gray Wise

Every month we feature an exemplary “Conch Head” as Employee of the Month. This is something voted on by the entire staff at The Conch Republic Grill, so you know the honoree truly deserves the recognition!

The current Employee of the Month is Gray Wise. He's been a server with us for over a year and both employees and customers rave about his hard work and quick wit. A waiter of 23 years, his philosophy is "hospitality is making someone feel at home, even if you wish they were! "

You must try our shrimp stuffed tenderloin, washed down with a drink called a 'Vacation' says Gray.
